Delicious, quick and healthy - this green smoothie bowl makes the perfect breakfast

I mentioned a little while ago that I would post my favorite breakfast green smoothie recipe – and this is it :)

Most of us dont get as many vegetables as we should – myself included. I love little ways of incorporating vegetables into other foods, and a green smoothie is a great way of getting some greens in first thing in the morning.

I like to serve my breakfast smoothies in a bowl with some chopped nuts or granola – and always a sprinkle of cinnamon (in case you havent noticed yet, I love cinnamon and put in on everything!) I think it feels more like a meal this way, being eaten with a spoon, than when its drunk it out of a glass. Its exactly the same thing of course, but it must have something to do with the visual size of it and idea of eating something as opposed to drinking it.

Green smoothie breakfast bowl

Note: you can make this as described below with fresh bananas, but if you have extra time, its best to use frozen bananas 

1/4 Cup rolled oats
1/4 Cup nuts (I usually use walnuts)
2 Tbsp shredded coconut

2 ripe bananas, chopped
2 cups milk of choice (almond, soy, coconut or dairy)
1/2 avocado
1/4 cup prepared chia seed gel*
1 medjool date, chopped
Handful washed baby spinach
1/2 tsp cinnamon

Add the first three ingredients to a blender and blend until well processed and resembling breadcrumbs.
Add the remaining ingredients and blend until well combined, about a minute or so.
Serve with your choice of the following: cinnamon, bee pollen, granola, coconut, fresh or dried berries

*To prepare chia seed gel, soak 2 Tbsp chia seeds in 4 Tbsp water for at least 10 minutes prior to preparing the smoothie

    You could also call it breakfast soup. I realized a few days ago that’s essentially what porridge is, soupy breakfast food.
