Superfood smoothie topper

April 7, 2014 9 Comments

A delicious blend of superfoods packed with nutrients - make a big batch to sprinkle on top of your daily smoothie

A quick post today, and a quick recipe to match.

I’ve talked before about how I like to eat my smoothies out of a bowl with a spoon – which I concede is perhaps is a little odd, but it just feels more wholesome to me that way. I also like to have a topping of some sort on my smoothie. Sometimes its fruit, often berries, or some chopped nuts. In a rush, its a sprinkle of cinnamon.

Lately I’ve been making a batch of this Superfoods mix so that I always have something on hand to “garnish” my smoothies with. It also works great on top of porridge, muesli, or sprinkled overĀ green smoothie pancakes. Its packed full of antioxidants, high in amino acids and essential vitamins and minerals and adding it to your morning meal makes it oh-so-much better!

Superfoods smoothie topper

Notes: The ingredients used here are those I often have on hand. Feel free to swap out one kind of seed for another, or add chopped nuts, cacao nibs – you get the idea!

1/2 cup shredded coconut
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup goji berries
2 Tbsp chia seeds
2 Tbsp sesame seeds
1 heaped Tbsp bee pollen

Roughly chop the bigger seeds either by hand or in a food processor.

Combine all ingredients in a container and mix well.

Store in an airtight jar for up to 2 months.

What a great idea! I usually eat my smoothies out of a bowl with a spoon too, and top with either granola or toasted nuts and chopped dates. But I love this mix, especially the bee pollen and coconut!!

I could eat this tasty mixture like museli or granola! I love the idea of having a nice smoothie topper for some added texture and health benefits. I MUST get on board with goji berries!

You’ll have to give them a go – I was a little put off when I first tried them, they are not as sweet as other dried berries and have a drier texture – just warning you so you can be prepared ;)

Haha – I really like eating my smoothie out of a bowl as well. It kind of feels like there’s more when you do it that way ;)
This topping looks amazing. I used to eat a lot of goji berries, but for some reason I haven’t had them in a year. I definitely have to start eating them again!

Eating smoothies out of a bowl is the best! Goji berries are great – Im not a huge fan of them on their own but love them mixed in with other things :)

This is such a brilliant idea Dearna! I also like smoothie bowls better than the drinkable versions and I always always top them with stuff, so this sounds perfect to me :)
