Sharing the love – recipe recap

Carrot cake pancakes by Jessica Cox

I hurt my back the other week. I decided to do some HIIT training without warming up (rookie error), and well… lets just say I spent the rest of the day lying face down on my bed feeling sorry for myself. When there wasn’t a huge improvement the following day, I took myself off to the doctor who advised that once the pain had subsided enough that it was bearable, it was far better to move around a little than to lay down flat allowing my back to seize up even more. She advised me to move around – but not too much. “Slow walking, gentle stretching – even things like a bit of cleaning or cooking at home would be beneficial”.

Doctors orders to cook!? I headed straight for the kitchen when I got home (and yes, completely ignoring the cleaning part!) I have a million recipes that I’ve highlighted for cooking – in Pintrest, emails to myself, bits of torn up paper stuck between the pages of my cookbooks. Normally I see something, make some kind of note to make it at a later point, and then subsequently forget about it. But when your doctor orders you to cook and subscribes a few days off work, then there’s really no excuse not to.

For those of you that follow me on Facebook or Instagram, you’ve probably already seen these pictures (and apologies for the terrible quality, they were all taken with my iPhone), however I wanted to do a little recap here of the ones that I loved to share with you all. I have included a link to recipe if you want to make it yourself – and I strongly recommend you do, all of the recipes here were incredibly delicious, and boyfriend-approved.

I am so terribly sorry to hear about your back. It definitely doesn’t sound funny. But I love how you just look at the bright side of it – more time for cooking! Wonderful.
All of these pictures make my mouth water. They are wonderful – doesn’t matter they are taken with an iPhone at all.
Get well soon (I actually don’t know if you can say that about injuries, but anyway, you know what I mean ;) )

Haha, yes I know what you mean ;) And yes – more time for cooking is always a win, so at least there was that!

I’m so sorry to hear about your back. I’ve injured mine before so I know how excruciating the pain can be. It’s probably one of the worst pains you can have. I hope it heals up soon!
The one thing I’ve found helpful to prevent my back pain from coming back is to always focus on using my core when I’m doing any kind of lifting or moves like burpees. But you probably already knew that!

The positive is that it gave you time to make some delicious recipes!! I am drooling over here. Thanks for the love too! :)

Thanks Sarah :) Yes back injuries are no fun, but definitely feeling a lot better now. Haha, that core tip was exactly what my Pilates instructor said to me too afterwards (through disappointed eyes – I have been told many times before!)
