When I was invited by Katie at Whole Nourishment to do a guest post on healthy mid-week dinners I jumped at the chance – Katie writes beautifully, creates delicious recipes, and is full of practical and helpful advise on not only healthy eating, but healthy living as well (in particular her posts on mindfulness always seem to come at a time when I need a gentle reminder and some friendly encouragement).
Midweek eating in our house rarely follows a recipe, I usually prepare a few different components at the start of the week that I use as the base for our meals throughout the week – so the recipe I have shared on Katie’s site honours this somewhat. While the dish contains quite a few components that you may not feel like cooking after a busy day at work, all components can be prepared (and cooked) in advance) resulting in minimal effort during the week.
